Hey, I'm Jack.

I started The Low Carb Co because I wanted a snack that worked with my health goals, not against them.

After years of paying close attention to blood sugar, energy, and how food actually feels in the body, I kept running into the same problem: most crunchy snacks were empty, flour-heavy, or not satisfying enough to be useful.
